Nestled on the sunny slopes of Mount Minthis at an altitude of 480 meters, our olive groves possess a remarkable terroir that gives our olives a distinct and unparalleled character. The convergence of various factors, such as the composition of the soil, the proximity to the sea, and the western orientation, has shaped an excellent environment that allows our olive trees to thrive and produce excellent fruit.

 

The steep slopes of Mount Minthis are a natural challenge for cultivation, but it is precisely these conditions that promote excellent drainage and aeration for the roots of our olive trees. As a result, the trees are able to draw the optimal amount of nutrients and water from the soil, which translates into the production of high-quality olives.

 

Our olive groves benefit from clay and clay loam soils which have a neutral pH. This unique soil composition provides the perfect balance of nutrients, allowing our olive trees to grow strong and healthy. In addition, the mineral content of the soil and its texture contribute to the distinct flavors of the olives, reflecting the essence of our terroir.

 

The close proximity to the sea adds a touch of maritime influence to our olive groves, as the gentle sea breeze moderates the warm Mediterranean climate. This results in a milder and more stable temperature range, which is vital for the optimal growth and ripening of our olives. In addition, the sea air imparts a subtle saltiness to the olives, further enhancing their unique flavor profile and embodying the spirit of our coastal terroir.

 

The western orientation of our olive groves also plays a decisive role in the development of our olives. With the sun setting on the western horizon, the trees are exposed to plenty of afternoon sunlight, ensuring that the olives receive plenty of warmth and energy to ripen to perfection. This generous exposure to the sun not only contributes to the rich flavor and high oil content of the olives but also promotes the development of the antioxidants and other healthy components that our olive oil is known for.
